You know it. New year, new me, no more muffins, ’cause I look like a muffin myself’. Yep, I know exactly how it feels so there it is – a recipe for delicious muffins with no sugar and no flour. It’s gonna go into your muscles (or boobs – whatever you prefer), I promise. Ideal for a carnival party or just simple Wednesday evening at home. Inspired by Greek tastes, made with the products that I brought from Greece, but that can be easily find in grocery stores. Easy, fast and deliciouuus. You are sooo welcome!
– 1 can of white beans
– 2 eggs
– 2 tbsp of Tahini (sesame paste)
– 1 tbsp of honey
– stevia (powdered, as much as you want – I added 1 tbsp)
– almond aroma
– 1 tsp baking powder
– salt (pinch)
– fruits if you like (I added strawberries to 3 muffins)
Rinse the beans and blend it until smooth. Add an egg, tahini, 2 drops of almond aroma, baking powder and salt. Add stevia. Blend all the ingredients together. Fill the muffin liners with the dough (the muffins don’t rise much, so fill the liners almost to the brim, so that they are not too low). Bake 25 minutes in 180* C (350 F).
I added strawberries to 3 muffines – if you want to do so, put them on the top.
